I preach getting enough protein intake like it is my job! I am super passionate about making sure protein is a big part of my diet because protein BUILDS MUSCLE! 

I am always creating up new ways to incorporate protein into my diet besides the boring…cheese, yogurt, protein shakes, etc. 

These cookie bars are packed with protein & SO dang delicious. They are the perfect snack or dessert, made with all clean real ingredients. Easy to put together & cook in 20 minutes!


Ingredients

  • 1 can of northern white beans (chickpeas will also work here) 
  • 1/2 cup creamy peanut butter 
  • 1/2 tsp baking power 
  • 1/4 cup maple syrup (or honey) 
  • 1/2 tsp ground cinnamon 
  • 1/4 tsp vanilla extract
  • 1/4 cup almond flour 
  • 1/4 cup vanilla protein powder (I used orgain) 
  • Desired amount of chocolate chips 

Directions: 

1. Set oven to 350 degrees. 

2. Add all ingredients (except chocolate chips) to a food processor or high spend blender. You can also add everything to a bowl and mix by hand but you will need to finely mash beans prior to adding all ingredients to a bowl. 

3. Gently stir in chocolate chips. 

4. Add batter to a greased 8 X 8 baking dish & top with additional chocolate chips. 

5. Bake for 17-20 minutes, until the tops appear golden brown.
