Sweet Potato Breakfast Casserole

A perfect “meal prepper” breakfast that packs the flavor, has your healthy carbs and fats and LOTS of protein! It will keep you full for hours and the portion is large enough that you’ll have breakfast for the entire week with this one! 

This meal is also perfect for when you need to serve a crowd! Minimal ingredients & no experience required in the kitchen required


Ingredients: 

  • 2 large sweet potatoes, cut into cubes 
  • 1 lb of lean ground turkey sausage 
  • 10 eggs 
  • 1/2 finely diced white onion 
  • 1/4 cup nut milk 
  • 1/4 cup cheddar cheese 
  • 6 cloves of garlic 
  • salt, pepper and everything but the bagel to season for taste
  • 3 green onions (optional for garnishing) 

Directions: 

1. Set oven to 375 degrees. 

2. In a large sauté pan, sauté sweet potatoes, garlic and onion. Sauté on medium heat for 8-10 minutes. Remove from sauté pan. 

3. In same pan, cook turkey sausage through. Once cooked, add your veggies (sweet potato & onion) back into the pan and remove from heat. 

4. In a bowl, mix eggs, milk, everything but the bagel seasoning, salt and pepper. 

5. Pour vegetable and sausage mix into a baking dish, lining the entire bottom of the baking dish. 

6. Pour egg mixture evenly over the vegetables and sausage. 

7. Top with cheese & greens onions. 

8. Bake for 45 minutes until the top of the casserole appears golden brown and the eggs no longer contain any liquid. 

TIP: If your top appears to be burning before your center is cooked, cover with aluminum foil!
