Lemon Blueberry Bars

Clean eating, lemon blueberry, healthy snacks

  

The most important thing when cleaning up your diet is to find healthier alternatives to the food you already love. 

Here is a recipe to replace that 500 calorie, 30 grams of fat, 80 grams of carb’s, starbucks loaf you grab with your coffee! Instead, prepare this at home, pack a piece to bring with you on the go and enjoy your healthy alternative! 

Ingredients: 

· ½ cup non-fat greek yogurt 

· 1  egg white  

· 2 tbsp coconut/almond milk

· ½ cup whole wheat flour 

· ¼ cup honey 

· ¼ cup coconut sugar

· Lemon juice from half a fresh lemon

· Handful of fresh or frozen blueberries 

Directions: 

1. Set oven to 350

2. Mix dry ingredients in a bowl 

3. Mix all wet ingredients in another bowl, except blueberries

4. Combine wet and dry until mixed well

5. Fold in blueberries 

6. Pour into a loaf pan and bake for 30 minutes 

7. Let sit until completely cool
